For the vegans and gluten-intolerants out there here’s your alternative for homemade ramen. I’ve made several different versions with this noodle and they’re good! Just a word of caution: Don’t follow the directions. No need to boil these noodles at all. Just make your broth with whatever soup base, veggies, chicken, seafood, etc, and add the noodles when you’re ready to eat. Just let them sit in the broth for a while with the stove off and voila! Yummy ramen every time. Very VERY easy to overcook these noodles.
